Brewing a Bigger Deal with New Coffee Bar
Already known for its premium organic coffee roaster, Ed Freedman has taken his Shearwater brand to the next level by opening up the Shearwater Coffee Bar in a downtown Fairfield location. While concocting pour-over coffee, lattes and cappuccinos, highly trained baristas can converse with customers about the different coffee roast profiles, brewing techniques and coffee selections. Freedman has chosen Jason Varga, who has worked for Espresso Neat and Tusk & Cup Fine Coffee, to manage Shearwater Coffee Bar.
Food and tea items are being brought in from Huckleberries Artisan Pastries, The Bee and the Bar, and Leaf & Ardor, among others. A retail selection will offer its USDA-certified organic and fair-trade coffee beans as well as equipment, such as grinders, French presses and pour-overs. A June opening is planned but a specific date has not yet been set as of press time.
