Sustainable Butchery Expands to Greenwich; Offers Classes

Fleisher’s Craft Butchery, a whole animal, sustainable butchery, is opening a new butcher shop in Greenwich. There are also new instructional classes at the Westport location and a confirmed date for its annual Porktoberfest event. Fleisher’s only uses animals that have been pasture-raised humanely on small Connecticut and New York farms on a vegetarian diet free of hormones and antibiotics.

  The new location in Greenwich is a retail butcher shop, as well as a grab-and-go market. The shop will carry cuts of organic beef, pork and chicken, as well as house-made sausages and burger blends. The market will have select produce and seasonal grab-and-go and provisions as well as heat-and-serve foods, including meatballs, stocks and sauces. The Greenwich location will also have a pick-up, drop-off and on-site catering service.

  Fleisher’s has an in-depth instructional teaching program for all levels of cooks and aspiring butchers. This fall, the company is holding five, one-night Tuesday classes from 6-8pm at the Westport location. The fee for each class is $100 per person.

Sausage Making 101 (October 6): As part of their Pig-to-Pork series, this class will teach you all about stuffing, twisting, and linking your very own sausage.

Beef Butchery 101 (October 20): Fleisher’s expert butchers will take you through an entire steer in this seminar covering sustainable sourcing, anatomy and cooking tips.

Lamb Butchery 101 (November 3): In this class, you will learn about Fleisher’s sustainable butchery philosophy as their experts break down a whole lamb.

Knife Skills and Poultry 101 with Victorinox Swiss Army (November 17): In this practical, hands-on class, you will learn the basics of handling a knife in your home kitchen, as well as tips and tricks for breaking down and carving the ultimate holiday bird.

Fleisher’s is also introducing its own Meat Stix, made from 100 percent grass-fed, antibiotic and gluten-free beef and pork with no added nitrites, MSG or soy. They will be available at the shops and online via the new e-commerce shop at Fleishers.com.

  On October 25, Fleisher’s will be hosting the 4th Annual Porktoberfest in Westport. Dust off your lederhosen and get ready for a full day of whole-roasted pigs, flowing beer, homemade sausages, an Austrian band and more. This will be a family friendly event with plenty of non-alcoholic cider, s’mores and games for kids.
